Spinach & Cheese Omelette
Ingredients
2 eggs
A handful of fresh spinach
2 tbsp shredded cheese (low-fat)
1 tsp olive oil
Salt and pepper
Instructions:

Beat the eggs with salt and pepper.

Sauté the spinach in a pan with olive oil for a minute.

Pour the eggs over the spinach, sprinkle cheese on top, and cook until done.

Fold and serve warm.
